Turkey Panini
Traditional Italian Turkey Panini recipe
Ingredients
- 3/4 cup chopped Italian parsley
- 7 green olives, pitted and coarsely chopped
- 2 tbsp capers, chopped
- 1 small clove garlic, finely chopped
- 1 tsp chopped lemon zest
- 3 tbsp extra-virgin olive oil
- 3 tbsp lemon juice
- 2 large pieces ciabatta, each about 4-6” or any other flatbread
- Sliced leftover turkey
Method
For salsa verde: place parsley, olives, garlic, capers, lemon zest, olive oil and lemon juice in a small bowl and stir well. Add salt and pepper to taste.
Cut ciabatta in half horizontally. Spread 3/4 of the salsa verde on teh bottom halves of the bread. Arrange turkey slices on top. Then spoon the remaining sauce over. Cover with the remaining slices of bread. Press down firmly so that the sandwich holds together and the salsa soaks into the bread to flavour it. Serve immediately.
